Zucchini + Carrot + Beet & Thyme Sauce
Get INSPIRALIZED with this zucchini and carrot side, snack, or small lunch. I topped these veggie noodles with one of my favorite go to sauces--beet and thyme sauce.
- 1 carrot
- 1/2 medium zucchini (or cucumber)
- 1 tbsp. olive oil
- Salt & pepper to taste
- Beet sauce (*see "SNACKS, SIDES, SAUCES" recipes)
Spiralize carrot and zucchini. Add to a plate or bowl and top with the beet dip. That is all there is to it, now go and enjoy the amazing flavors.
